Kelly made this ridiculously tasty dinner so I'm sharing the recipe with you!
First she chopped up a couple perfectly good ribeye steaks (my favorite steak; all you need is salt and pepper). She sauteed onions, garlic, and mushrooms with salt in ghee until caramelized and then added the steak pieces and cooked to medium rare.
She halved the peppers and broiled them in the oven for a few minutes on each side. Next the meat mixture was put into the pepper halves and drizzled lightly with balsamic glaze then topped with slices of Havarti cheese. They went back into the oven on broil for a few more minutes until browned on top.
Very simple, juicy, and delicious. I feel much better on low carb diets but the key is to make food that tastes so good that I don't get bored. If you try this recipe, I hope you enjoy it!
