Cinnamon Flax Meal Pancakes

These pancakes are nutrient and fiber loaded and will satisfy your morning bread craving while still being RESET friendly.


  • 1/2 cup flax meal

  • 2 tbsp butter

  • 1/2 tspn baking powder

  • 1/2 tspn cinnamon

  • 2 eggs


  • beat eggs in a bowl

  • add the rest of the ingredients (you may want to microwave the butter for a few seconds)

  • stir until well mixed

  • pour half the mix onto a microwave safe plate and spread evenly into a round flat pancake

  • microwave 1 minute

  • do the same with the second portion of mix

You now have two hearty yummy low carbohydrate and high fiber pancakes. You can add berries to the mix before cooking as an option. I like to serve them with more butter on top and peanut butter or almond butter.
